We opened Restoran Paradigma with an aim at presenting the very best the Mediterranean has to offer in an exclusive ambiance and service to match. Our ambition is to heighten the paradigms of hospitality in Dalmatia and we believe that the team’s passion and expertise in our field will allow us to achieve just that.
Our Head Chef Ante Udovičić has fabricated an enticing menu that represents the entire Mediterranean, and he has added creative flair to classics such as bouillabaisse, vitello tonnato, and surf’n’turf by introducing advanced cooking techniques, reinterpretations and deconstructions, artistic presentation, and mouth watering additions such as olive oil sorbetto, sous vide steaks, pršut powder, and red wine air.
No less attention has been paid to the wine list, an impressive selection of both local and international wines with a focus on indigenous varieties from Dalmatia and the Mediterranean put together by our Head Sommelier, Roko Bekavac.
Paradigma’s interior is modern and elegant with blue undertones and a spectacular private rooftop terrace and Riva views located behind Prokurative Square (Trg Republike).
