Sandi Chiavalon, one of the youngest and, we can freely say, most progressive and energetic Istrian olive makers, started following his dreams while he was practically in high school. His vision was to use the latest technology in order to get the best from olive trees his family traditionally grew. Since then, he planted numerous trees, and has been recognized as one of the best Croatian olive oil producers. His olive oils were among the first Croatian ones to enter the prestigious Flos Olei world olive oil guide, and also, the first one available worldwide. As for us, we feel there isn't a meal or an ingredient that won't taste better with Ex Albis Chiavalon olive oil! For realz! If you pass near Draguć, don’t miss visiting this monument of ancient agriculture. At the end you can taste and buy excellent extra virgin olive oil that Blažević family makes from ultra local olive variety Črnica. Oliver is the son of Ivan Blažević, a brave and visionary guy who, some 10 years ago, decided to put back in shape an old olive grove that was completely covered in dense forest. We take a macadam road which descends steeply, following the southern slope of the hill on which Draguć is settled. Oliver tells me how they invested a lot of weeks of hard work with all sorts of heavy machinery just to rebuild this road that leads to their beloved olive trees. The entrance to the olive grove looks like a tunnel. As soon as you enter, the bright summer light is eaten up by the network of interwoven branches of neighboring trees.

Krasica is a small village just a few kilometers from the medieval town of Buje famous hosting the most prestigious olive oil exhibition in Istria every year in March. You can visit Nino Činić’s tasting room and shock your palate with piquant extra virgin olive oil coming from the green hills surrounding the village. Nino is a local olive grower whose olive oils regularly enter the prestigious Italian extra virgin olive oil guide Flos Olei curated by Marco Oreggia. A true expression of northern Istria is the oil made of 100% Bjelica, an olive variety indigenous to this region, resistent to strong wind “bura” and low temperatures. It is of dark green color, almost fluorescent in its appearance. The oil is dense, with strong aromas of fresh green grass and olive leaves, green apple, radicchio and aromatic herbs. The flavor is strong, more herbaceous and vegetable-like than fruity, dominated by bitter and peperish notes (especially in the finish), which are nevertheless well-balanced and pleasant. Nino also produces olive oils from Leccino and other Tuscan olive varieties whose flavor is less aggressive and thus more suitable for delicate palates. Booking in advance is essential.

Did you know it’s possible to make a very special vinegar from fragrant elderflower berries containing plenty of polyphenols, vitamins A, B1, B2 and J, valeric, tannic and malic acid? The story of elderberry vinegar begins in the 11th century in the heart of Istria, where it was discovered by Benedictine monks in the monastery of St. Peter in the Woods. In 1993 renowned Istrian herbalist Franko Zgrablić brought the elderflower vinegar recipe to life after it had been forgotten for many centuries. It’s a gourmet delicacy with an exceptionally balanced aroma of fresh berries and Mediterranean herbs. You can’t believe a vinegar can be so gentle! Today this indigenous Istrian product is produced under the name “Sanbuco” in cooperation between Franko and MIH. We shouldn’t forget their excellent extra virgin olive oils San Gurmano, delicate or intense version, which are starting to conquer the palates in the UK, Belgian and US markets.

For the last seven years or so family Vošten has been winning gold medals for their monocultivar extra virgin olive oil made from buža – the queen of Istrian extra virgin olive oils. Scent of white flowers and dry hay, sweetened with aromas of nuts. The taste is sweet but well-balanced with the refreshing bitterness that comes to surface a bit later. It will be adored by people who like sweet, gentle and not pepperish olive oils. Perfect oil for unusual desserts with dark chocolate, chocolate mousse for example, but also with delicate fish and salads. They also produce good olive oil from more common Leccino and Pendolino varietals.
